Amy, I suspect maybe your oven temp is high, try to reduce temperature or put one level lower. Stop obsessing about what is or isn’t healthy for you, focus on living a happy life, and place your values where they matter, instead of on the work you hate and the things you do because other people tell you they are healthy / unhealthy.
You can tell when they are ready by opening the oven and putting your finger on one of the macarons. Even thick fillets of salmon will cook very quickly so don’t wander too far from the oven. I pop two frozen salmon filets out of the freezer and can be eating within 30 minutes or so. Normally I’ll serve it on top of brown jasmine rice cooked in some coconut milk.
This seasoned salmon is pepper crusted and lighted coated with salt and olive oil—that’s it! I have personally found that most recipes will work as long as you get the macaronnage technique right. Remove salmon fillets from refrigerator and allow to rest at room temperature 10 minutes.
Turn them over and cook on the other side for 3-4 minutes, basting with the sauce so that the salmon is well coated. Place salmon in a single layer in a gallon-size zipper-lock bag, or in batches in quart-size bags. That may even have been more delicious than the salmon – will definitely make that again!
