This is one of those quick, comforting, homemade suppers that should be taken to the sofa with a glass of red wine. I’m going to try this with ground turkey (skipping cheese and using water instead of milk) and hopefully it works out well! This is a variation of the ever-popular spaghetti bolognese and is sure to become just as well-loved. A pot of bubbling sauce may be the classic meatball vehicle, but these feta-fied skewers are a wiser choice for entertaining. Pour in 2 cups of hot milk and stir into the meat mixture, making sure to scrape any brown bits off the bottom of your pan. Add the egg and almond flour mix (plus parsley if adding) and gently mix with your hands until the mixture binds and is evenly distributed.
