Try Mary Berry’s chocolate cake recipe for a delicious and moist chocolate sponge cake with creamy chocolate icing. A really nice cake so moist and fluffy 😀 Important: It really needs to be cooked for 60minutes, 45 just won´t do it. Milk or water are sometimes added to the final mixture – I’m with Bell in sticking with milk. I may still try to make a cake this way and see how that works, but won’t be making diet coke brownies again.

I used this recipe to make a lemon cake for 100 people when the resort I was the Pastry Chef at, ran out of eggs. If you want a cake shape (instead of cupcakes), just pour into a 8″ round cake pan and bake for about 35 to 40 minutes, until a toothpick inserted into the center comes out clean.
I second this, I baked these exactly as it says in the recipe and the 2 cakes turned out fine in 35minutes. Maybe not the layer version…but yes on the chocolate whip cream frosting, for sure! Debbie, yes, you can use to roll out or use tart cutter, but advise to keep the dough in the fridge to slightly harden it then easy to handle.
Our favourite chocolate cake comes with a delicious layer of raspberries in the middle! I’d recommend treating the pans with Miracle Cake Pan release (equal parts oil, shortening, flour whisked together and applied to the pan with a pasty brush). My cake was sunken in the middle (like some have called out) and the cake turned out REALLY dry.
