My daughter has allergies and can tolerate one egg cakes so we are no trying to step up to 2 eggs but I’d like to try your recipe. This delicate cake will have a flat slightly sugary top crust which tends to crack. I’ve not reduced the sugar in this recipe and it is the amount tested in the recipe and baked successfully so many times.
